Kappo Garyu is a modern omakase sanctuary nestled within a conservatory shophouse on Telok Ayer Street, helmed by Chef-Owner Raymond Tan — who began his culinary journey at 19 training in the washoku tradition in Tokyo. Drawing on both Japanese and Chinese influences, Kappo Garyu offers a refined reimagination of kaiseki: multi-course, seasonal, and deeply considered — where baking, smoking, charcoal-grilling, and frying are each deployed with surgical precision to honour the ingredient. Signature creations such as the truffle-caviar-uni croissant speak to a kitchen that is as playful as it is disciplined. At UltraLuxe Festival 2026, Kappo Garyu takes its craft beyond its walls for the first time, presenting an exclusive chef’s special menu for DineLuxe members on-site.
